Hina-toro, also known as Furisode, is a specialty of Sumire.Usually, one knife is inserted between the chicken wings and the breast meat to dismantle it, but in order to remove this rare shoulder meat, the knife is inserted many times to take it out.Wrapping the meat inside with the skin of the shoulder meat, skewer each one carefully by hand.Bake until the skin is golden brown.
"King's liver" made from one Daisen chicken raised in Tottori's famous mountain "Daisen" is large and weighs 60g.
