Hinatoro, also known as furisode, is a specialty of Sumire.Normally, a chicken is butchered by inserting one knife between the wing and breast meat, but in order to obtain this rare shoulder meat, the knife is inserted multiple times to remove it.The skin of the shoulder meat is wrapped around the inner meat and each skewer is carefully skewered by hand.Cook the skin until golden brown.
